The Yellowfin Season: A Guide to the Ultimate Tuna Braai

As the currents bring an abundance of Yellowfin Tuna—or Ahi—to our shores, it’s time to dust off the braai (grill). This "King of the Sea" is a true showstopper, offering a meaty, buttery texture that bridges the gap between seafood and a prime cut of beef.

What is Seared Tuna?

In the world of professional cooking, "Searing" is a technique where the surface of the food is cooked at an extremely high temperature until a caramelized crust forms.

For Yellowfin, searing is the gold standard. Because Tuna is very lean, it dries out quickly if cooked through. By searing, you achieve a "best of both worlds" result:

  1. The Exterior: A savory, smoky, or crunchy crust (often enhanced by spices or seeds).

  2. The Interior: A cool or slightly warm, buttery center that retains all the natural moisture and omega-3 oils.


What Exactly is a Tuna Steak?

Unlike the flaked varieties in cans, a Tuna steak is a thick-cut cross-section of the fish, usually from the loin. Yellowfin is the favorite for grilling because it is incredibly firm. When raw, it’s a deep ruby red; when seared correctly, it looks like a beautiful pink jewel framed by a thin layer of cooked meat.


The Do's and Don’ts

DO:

  • Pat it dry: Use a paper towel to remove surface moisture. This is the secret to a perfect sear; moisture creates steam, which prevents that crust from forming.

  • Use high heat: Your pan or braai grid should be screaming hot.

  • Rest it: Let the steak sit for 3–5 minutes to allow the juices to settle.

DON’T:

  • Over-marinate: Acidic marinades (lemon/vinegar) will "cook" the fish like ceviche. Keep it under 30 minutes.

  • Walk away: Tuna cooks in a flash. A difference of 60 seconds is the difference between a delicacy and "tuna jerky."


Levels of Doneness

Tuna should be treated like a fine steak. Most chefs recommend Rare to Medium-Rare.

Blue/Rare Deep red, cool center. Seared for ~45 seconds per side. 40-45 Celsius 
Medium-Rare Warm, ruby-pink center. The "Gold Standard." 48-52 Celsius
Medium Light pink center, mostly opaque. Starting to get dry. 55 Celsius
Well Done Grey/white throughout. Generally avoided for Yellowfin. 62+ Celsius

Freezing and Storage

  • Fridge: Fresh tuna lasts 1–2 days in the coldest part of the fridge.

  • Freezer: Because Yellowfin has healthy fats, it is best consumed within 3–4 months. Beyond that, the flavor can change.

  • Tip: Vacuum-seal the steaks to prevent freezer burn. If you don't have one, wrap tightly in plastic wrap, then foil.


Why Is It a Delicacy?

Yellowfin is prized for its lean protein and Omega-3 fatty acids. Beyond nutrition, its appeal lies in its versatility—it’s firm enough to hold up on a braai grid but delicate enough to be served as Sashimi.


Recipe: Sesame-Seared Braai Tuna

  1. Prep: Brush steaks with soy sauce and sesame oil.

  2. Crust: Press the edges or the flat sides into a plate of toasted sesame seeds.

  3. The Sear: Get your coals white-hot.

  4. Cook: Sear for 90 seconds on one side, flip, and sear for 60 seconds on the other.

  5. Finish: Squeeze over fresh lime and slice against the grain to show off that beautiful pink center.

Best Side Dishes

  • Coconut Jasmine Rice: The creaminess cuts through the salty soy.

  • Garlic Bok Choy: Briefly sautéed with chili flakes.

  • Cucumber & Avocado Salad: A refreshing, cool contrast to the hot sear.


Pro Tip: If you're nervous about doneness, use the "finger test." A medium-rare tuna steak should feel like the fleshy part of your palm just below your thumb when your middle finger is touching your thumb tip.
